img_size=&#8221;full&#8221;][vc_column_text]<\/p>\n<h3><span style=\"color: #3c623d;\">Did you know\u2026<\/span><\/h3>\n<p>The <strong>frisella<\/strong> or <strong>frisa<\/strong>, is an authentic symbol of the <strong>Mediterranean diet<\/strong> and, in particular, of the <strong>Lucanian cuisine<\/strong>.<\/p>\n<p>It is a large <strong>crunchy tarallo<\/strong> made from <strong>durum wheat<\/strong> flour, <strong>barley<\/strong> or other cereals, which is <strong>\u201cbis-cotto\u201d<\/strong>, that is, <strong>cooked twice<\/strong>: the first time it is cooked to a <strong>golden colour<\/strong>, then <strong>cut in half<\/strong> horizontally with a string, and lastly it is baked again to eliminate any trace of humidity, until it is a <strong>crunchy biscuit consistency<\/strong>.<\/p>\n<p>The very technique with which the frisella is cut in half (&#8220;choke&#8221;) is responsible for the different appearance of its two surfaces: while the lower surface remains smooth and compact, the upper one is <strong>rough<\/strong> and <strong>irregular<\/strong>.<\/p>\n<p>The origins of this <strong>simple<\/strong> and <strong>genuine<\/strong> <strong>recipe<\/strong>, are lost in the mists of time: the first friselle were enjoyed as <strong>travel bread 3,000 years ago<\/strong>, on board Phoenician ships!<\/p>\n<p>Before consuming them, the sailors soaked them in sea water, and then flavoured them with olive oil and onions.<\/p>\n<p>Thanks to their typical <strong>ring shape<\/strong>, the friselle were conveniently stored and transported hanging on a <strong>string<\/strong>, like pearls on a delicious necklace!<\/p>\n<h3><span style=\"color: #3c623d;\">How is it made?<\/span><\/h3>\n<p>The frisella is hard and crunchy, which is why, before being seasoned and tasted, it must be <strong>softened<\/strong> and <strong>soaked<\/strong> with water, but not too much.<\/p>\n<p><em><strong>The frisella must not be too wet or too dry: it must remain compact and crunchy inside!<\/strong><\/em><\/p>\n<p><strong>Therefore, avoid leaving it to soak for too long. Wet its surface with water at room temperature, as evenly as possible (feel it to check that it has softened to the right point).<\/strong><\/p>\n<p>After having softened the friselle, you just need to <strong>season it<\/strong>. The ingredients of this &#8220;poor&#8221; recipe are simple, but they must be <strong>fresh<\/strong> and of <strong>excellent quality<\/strong>.<\/p>\n<p>The traditional recipe involves dressing the friselle with a good <strong>Extra Virgin Olive Oil<\/strong>, fresh <strong>tomatoes<\/strong>, <strong>salt<\/strong>, <strong>basil<\/strong> or <strong>oregano<\/strong>.<\/p>\n<p>Proceed as follows: place the friselle on a large plate or tray and season them with a generous round of <strong>Extra Virgin Olive Oil<\/strong>, then add a pinch of <strong>salt<\/strong>.<\/p>\n<p>At this point, <strong>rub<\/strong> the tomatoes on the top surface of the friselle, so that their juice penetrates deeply and gives them flavour.<\/p>\n<p>Make a few more turns of <strong>oil<\/strong>, then <strong>salt<\/strong> the tomatoes; you can also add a little <strong>pepper<\/strong> if you wish.<\/p>\n<p>Then sprinkle with chopped <strong>dried oregano<\/strong> or garnish with a couple of fresh <strong>basil<\/strong> leaves.<\/p>\n<p>If you love <strong>garlic<\/strong>, you can rub a clove on the friselle, before moistening them with water.<\/p>\n<p>Enjoy!<\/p>\n<p>[\/vc_column_text][vc_single_image image=&#8221;406&#8243;
